Dragon Well Prawns Stir Fry

This dish is originated from Shanghai and Hangju area in China as they produce the best quality of the two ingredients, fresh water prawns and Dragon Well tea. The meat texture of the fresh water prawns is slightly more delicate and sweeter in taste. They are best to cook with Dragon Well tea leaves. Although we cannot get fresh water prawns that easily here, we can use tiger prawns and they are also very nice.
Ingredients:
Raw tiger prawns (shelled and de-veined) 350 g Fresh ginger (grated) 1 tsp Shaoxing wine ½ tsp Dragon Well tea leaves 2 tbsp
The sauce:
Dragon Well tea 100 ml Salt ¼ tsp Chicken stock granule ¼ tsp White pepper 1 pinch Corn starch 1 tsp Sesame oil a few drops
1. Brew the tea for the sauce: Brew the tea in 100 ml of boiling water with 1 tbsp tea leaves. Let it brew for 20 minutes before use. 2. Put the prawns in a big bowl and add 1 tsp of salt in it. Rub the salt thorough the prawns for about 30 seconds. Rinse off the salt thoroughly. 3. When the tea for the sauce is ready, add all the seasonings for the sauce and stir well. Set aside to use. 4. Heat a frying pan on high heat until it is slightly hot. Add 2 tbsp of vegetable oil and heat it until it starts to smoke. Turn the heat down to medium high. 5. Add the tea leaves and stir for 30 seconds. 6. Add the prawns and ginger. Stir it for another 30 seconds. 7. Add Shoaxing wine from the side of the pan so that it creates steam towards the centre to flavor the prawns. Cover the pan with a lid and let it cook for 10 seconds. 8. Stir the sauce well and add it in the pan. 9. Keep stirring until the sauce is thickened and bubbling. 10. Remove from heat and serve immediately.
