Fragrant Green Tea Pudding (香蜜綠茶桂花糕)
When I lived in Hong Kong, for a couple years I needed to quite a bit of travelling. Every time when I went to the airport, I always visited a Chinese tea shop where they sold Chinese tea leaves and served Chinese tea and snacks. My favourite is a jelly made from green tea. Unfortunately the shop is gone now. So I tried to make one myself, of course with some improvisations. This is a healthy, light and refreshing dessert for those who love Chinese tea. It is also a vegetarian and vegan dish. Hope you like it too.
Ingredients:
Tie Guan Yin, Longjing or Bi Luo Chun tea leaves 1 tbsp Dried Osmanthus 3 tsp Agar agar 10 g Water 700 ml Honey 60 ml (or to taste) Goji berry (rinsed) 1 tbsp
1. Heat the water in a pot until boiled. Take it off the heat. 2. Add the tea leaves and 1 tsp of the dried Osmanthus flowers in the water and let it brew for 5 minutes or until the tea has reached the strength that you like. 3. Drain it through a sieve and pour the liquid back to the pot. 4. Add Goji berries and agar agar. Cook until Goji berries are reconstituted and agar agar all melted. It will take about 10 minutes. 5. Add honey in the liquid and stir well. 6. Switch off the heat and add the 2 tsp of dried Osmanthus flowers in the liquid and mix well. 7. Pour the mixture into a mould or a plastic container. Put it in the fridge and let it set. 8. Once set, shake it gently out of the container onto a plate. Cut and serve.
Notes: If you prefer the texture of jelly than agar agar, use gelatin leaves instead. For a package of gelatin (4 leaves), you will need:
Tea leaves ¾ tbsp Dried Osmanthus 2 tsp Water 1 pint Honey 40 ml (or to taste) Goji berries 2 tsp
