Tea Flavoured Eggs (Yield 6 eggs)
This snack is a good old savory snack and is very popular in Hong Kong and Taiwan. They are widely available at tea cafés as afternoon tea snacks. It is dead easy to make. I used to make it when I was a kid. If you like savory, soy and anise flavor, you would love this dish. A cup of freshly brewed Chinese tea is the best accompaniment.
Ingredients:
Eggs 6 Water 1 litre Star anise 2 Cinnamon stick 1 Tie Guan Yin or Pu’er 3 tbsp Mascavada sugar 1 tbsp Dark soya sauce 50 ml Light soya sauce 50 ml Salt 1 tsp
1. Put the eggs in a pot of water and bring it to boil. Cook it for 10 minutes. 2. Drain off the water and put the eggs in a bowl of cool tap water for 15 minutes. 3. Cook the marinate: add 1 litre of water in a pot and add all the seasoning and spices in it. 4. Bring it to boil and simmer it for 15 minutes. 5. Drain the water and crack the shells by gently banging the eggs on the worktop and roll. Leave the shells on. 6. Add the eggs in the marinate. Bring it to boil and simmer it for 15 minutes. 7. Remove from heat and let it marinate for at least a few hours before serve.
Note: You can even leave them in the fridge marinating overnight. Heat it up again before serve. The marinate can be the dipping sauce.
