Tunic Chicken Soup for Colds – Chicken, Goji berry, Longan berry and ginger (Serving 4)
This is a simplified version of Chinese tunic chicken soup. Traditionally this soup is made from a chicken breed called Silkie and added a few more Chinese medicinal herbs. In this recipe, we are going to use ordinary organic chicken and simple ingredients. This soup is good for replenishing and combating cold and flu. It takes hours to cook but I promise you it does worth it.
Ingredients:
Organic chicken breast (skinless) 350 g Longan berry (rinsed) 10 Goji berry (rinsed) 4 tsp Ginger 1 inch/ thumb size
1. Boil 2.5 litres of water in a pot. 2. Scrape off the skin of the ginger with a spoon and slightly crush it. 3. Add ginger, chicken (keep breasts whole), Longan berry and Goji berry in the boiling pot of water. 4. Bring it to boil and turn it to low heat. 5. Simmer it for about 2 hours. Check every hour to make sure water is not boiled out. 6. When ready, add ½ tsp of salt or to taste.
You can eat everything in the soup. Dip the chicken in light soya sauce mixed with a few drops of sesame oil.
