Summer Fiesta (Dried Osmanthus, Longan berry and honey iced green tea)

Dried Osmanthus, Longan berry and honey iced green tea (Yields 4 glasses)
Longan berries are such a versatile fruit that it can be used with lots of different herbs or teas such as Goji berries, Chrysanthemum and rose buds. In hot summer days, I like to make this drink. It is healthy, cooling and refreshing. Who needs a fizzy drink!
Ingredients:
Tie Guan Yin or Yellow Gold Oolong (medium strength) 3 tbsp Boiling water 1 litre Longan berry 20 Dried Osmanthus ½ tsp Honey 4 tbsp (or to taste) Ice cubes or crushed ice
1. Rinse Longan berry in cold water and drain. 2. Rinse the tea leaves in 50 ml of boiling water for 10 seconds. Discard the water. 3. Add 1 litre of boiling water and the dried Osmanthus to the tea leaves and let it brew it for 20 minutes. 4. Drain and discard the tea leaves. 5. Add Longan berry to the tea and let it cool. 6. Add honey to the tea, stir well and taste. 7. Chill it in the fridge for 3 hours or until it is cold. 8. Drain the tea in a jug and keep the Longan berry. Place the Longnan berry in the glasses (5 in each glass). 9. Pour the tea in the glasses. Add ice cubes or crushed ice. 10.Serve with a sprinkle of Dried Osmanthus flowers on top of the ice and a straw.
